You will need:
1 cup grated carrots
1 tbsp sweet raisins
1/2 tsp minced ginger
1 tsp chopped cilantro
1 tsp lemon juice
Rock salt to taste (optional)
1/4 tsp fresh-ground black pepper
1/2 tsp black or brown mustard seed
1 pinch hing (asafetida)
1 tbsp ghee
Combine carrots, raisins, salt, pepper, cilantro, ginger and lemon juice in a bowl. Mix well.
Heat ghee in a pan until clear. Add mustard seeds and wait for them to pop. (Hold a lid over the pan to prevent the seeds from dancing everywhere). Add asafetida.
Pour the hot ghee-spice dressing on the salad. Mix well.
